Dandelion pesto pasta recipe
Dandelion greens make a wonderful, nutritious pesto, today couple with Emmer wheat pasta 💚
Ingredients:
Bunch of dandelion greens
50ml virgin olive oil
50g pine nuts, toasted
2 garlic cloves
40g Parmesan, grated
150g Emmer wheat pasta
Method:
Blitz the dandelion greens with the olive oil, garlic and pine nuts in a food processor.
Transfer the pesto to a frying pan and fry for about 5min, stirring constantly.
Add the pasta to the frying pan with a ladleful of the water it cooked in.
Stir to combine and season with salt and black pepper before serving.
